Climacteric and Non-Climacteric Fruit Varieties

Climacteric fruit varieties – fruit varieties that continue to ripen after being picked thanks to the ethylene gas that they emit.

Non-climacteric fruit varieties – fruit varieties that don’t continue to ripen after being picked, and thus they stay at the stage of ripeness at which they are when they are picked.
