3-Circle Salad

This salad is literally scrumptious! It consists of three layers, ie circles, and each is a story for itself as far as taste is concerned. When all three circles are spooned together at the same time, you get a synergy of magical tastes. πŸ‘ŒπŸ˜‹

πŸ₯— Circle #1 – The center of the center 🎯

In the middle of this salad, there is a raw, yet warm, creamy pudding. 🧑

πŸ₯— Round 2 – Green Frame

Ingredients:

  • 18 oz / 500 g cucumbers
  • 18 oz / 500 g Golden Delicious apples
  • 1 zucchini
  • 1 oz / 30 g of pumpkin seeds
  • 1/2 teaspoon dried dill

Preparation

  • Soak the seeds in clean water, ideally for 8 hours.

  • Peel the cucumber.
  • Peel the apples.
  • Deseed the apples.
  • Using a flat knife on the mandolin or a flat slicer on the food processor, slice cucumbers and apples into thin slices.
  • Put all the slices together in a salad bowl.

  • Rinse the seeds.
  • Peel the zucchini.
  • Chop the zucchini.
  • Put the chopped zucchini and pumpkin seeds into the blender.
  • Blend these two ingredients into a thick dressing.
  • Add the dried dill to the blender.
  • Briefly blend the dressing with the dill.

  • Pour the dressing over cucumber and apple slices.
  • Mix everything.

πŸ₯— Round III – Orange Margin

Ingredients:

  • 5 oz / 150 g of celery root
  • 5 oz / 150 g of carrots
  • 5 oz / 150 g of Granny Smith apples

Preparation

  • Peel the celery and carrot.
  • Shred celery and carrot.
  • Put shredded celery and carrot in a bowl, so in the freezer for about 8 hours.

  • Remove the celery and carrot from the freezer and let them thaw and thus soften (freezing and thawing leads to the expansion of water inside the vegetables, and under pressure the cell walls of the vegetables crack, resulting in softening of the vegetables).

  • Peel an apple.
  • Remove the seeds from the apple.
  • Shred the apple.

  • Mix shredded apple with shredded celery and carrot.

  • Arrange a three-layer salad in a circular shape.
  • If desired, add arugula leaves around the edge of the salad.
